Christmas Cheesy Potato Recipe

Good morning! I have a yummy post for you today!! I don’t usually post a recipe but this one is too good not to share! Remember you can see what the other hosts are sharing by going back to the first post.

My mom has been making this Potato Casserole for years and it is always gone by the end of dinner! In fact, she now makes two 9 x 13 pans for our family. It’s so cheesy and yummy and super easy. I’m sure this will become your family’s next favorite!

Christmas Cheesy Potato Casserole

Ingredients:

  • 1 Package (2 lbs.) frozen hash browns
  • 1 can cream of chicken soup
  • 1 small container of sour cream
  • 2 cups grated Cabot cheddar cheese
  • 2 tablespoons dried onion
  • 1 cube butter + 2 tablespoons melted butter
  • 1 cup corn flakes

Mix first 5 ingredients plus the 1 cube butter, in a large bowl.  Pour into a 9 x 13 oven-safe pan. Melt the 2 tbsp. butter and mix with the corn flakes. Spread over the  top.            Bake on 350 degrees for 1 hour. Serve hot and enjoy!

Last Minute Gift! Orange, Cinnamon, & Clove Simmer Pot

I love the smell the cinnamon! And oranges! and cloves! Here is a simple way to get these wonderful scents into your home!

These are great if you are looking for a few last minute gifts! They can be made quickly and easily. I made a few of these last year as gifts for my friends and gave one to my sister for her birthday this year. Then my sis asked me to make some for her friends as Christmas gifts! They are that good!! And so easy!

Here is what you will need:

  • glass jar
  • orange peels-I used 6 pieces for my size jar-I let them dry for a couple of days
  • cinnamon sticks-2 sticks broken in half
  • cloves-about 1 tsp.
  • any other goodies you like, such as cranberries, evergreen, vanilla, ect.

This is what is looks like in the pot. I use a small crock pot that I can leave on when I am home and enjoy the smell all day. You can also use a small sauce pan on the stove and let it simmer, just be sure to regularly check the water level.

I started with some glass jars from Michaels. Since these were for a group, I did them all the same, but I have used a variety of jars in the past. Mason jars or spaghetti sauce jars or any other kind work just as well. I bought a few different ribbons to tie around the top. I put a small dot of hot glue on the back to hold the ribbon and then a little more on the front so it wouldn’t slip.

I tied the ribbon different ways. Some were a bow and some just crossed over each other. I added a little bell, that I already had, to each one tied on with bakers twine or plain twine.

Here they are, almost ready to go! I will let the orange peels dry for a couple of days, add a tag with directions and they are ready to go to their new homes. I did end up adding some cranberries too. They looked really nice with a little touch of red.

You can customize these many different ways. They would make great gifts for teachers, co-workers or anyone who needs a little extra something.  Have you ever mixed together different goodies for a simmer pot? What did you use? I would love to try some different scents!

Yummy St. Patrick’s Day Salad

Happy St. Patrick’s Day! We have a special edition for you just for the holiday! This is such a simple recipe! You can whip it up in no time!

The ingredients:

  • 8 oz. container of whipped cream
  • 1 box (34 oz.) Pistachio Jello Pudding
  • 1 can crushed pineapple with juice
  • 1 cup small marshmallows
  • 1/2 cup walnuts (optional)

Place all ingredients in a bowl. Don’t add milk to the pudding-just the powder.

That’s it! So simple! You can eat it right away, but it tastes better after it’s chilled and the flavors have melded together.

FUDGY CHOCOLATE-OATMEAL BARS

Valentine’s is getting closer and Hopefully spring is on the way, no matter what the Groundhog says! ! Ithought I would bake up a sweet treat to give to your Valentine or a whole group of Valentines!  am not sure where this recipe came from, but I have had it for a long time and it is so good.  It makes a large amount of bars, so it is a good dessert to take to a potluck or family gathering. So here is the recipe!

FUDGY CHOCOLATE-OATMEAL BARS

1 cup (2 sticks) butter, divided

2 cups packed brown sugar

2 eggs

4 teaspoons vanilla, divided

2 1/2 cups all-purpose flour

1 teaspoon baking soda

3 cups quick-cooking rolled oats

1 can (14 oz.) sweetened condensed milk (not evaporated milk)

2 cups (12 oz. package) semi-sweet chocolate chips

1 cup sliced almonds, divided (optional)

Heat oven to 350 degrees. Set aside 2 tbsp. of the butter. Beat the remaining butter in a large bowl on medium speed on mixer for 30 seconds. Add brown sugar, beat until combined. Beat in eggs and 2 tsp. of the vanilla.  Stir together flour and baking soda in another large bowl, stir in oats. Gradually stir flour mixture into beaten mixture. Set aside.

Combine reserved 2 tbsp. butter, the sweetened condensed milk and chocolate chips in a medium saucepan.  Cook over low heat until chocolate melts, stirring occasionally. Remove from heat.  Stir in 3/4 cup of the almonds and remaining 2 tsp. vanilla.

Pour two-thirds (about 3 1/3 cups) of the oats mixture into the bottom of an ungreased 15 1/2 x 10 1/2 x 1 inch jelly-roll pan.  Spread chocolate mixture over the oats mixture.

Using your finger, dot remaining oats mixture over the chocolate.  Sprinkle with remaining 1/4 cup almonds.

Bake about 25 minutes or until top is lightly browned (chocolate mixture will still look moist). Cool in pan on a wire rack. Cut into 2 x 1 inch bars. Makes about 75 bars.
